Bob Marley - A Tribute to Freedom Adds a One Day Only Jamaica Independence Day Menu in Universal CityWalk on August 8

Universal Orlando announced the event on its Discover Universal blog on Thursday, July 30. Jamaica's independence celebrations are commonly observed across the surrounding week and weekend, so a Saturday date is ordinary rather than a slip.

The part worth reading carefully is the availability. Universal's wording is that the dishes are yours "exclusively on August 8." This is a one day menu, not a limited time menu, so a CityWalk night any other week in August will not have it.

Two dishes off the grill, available August 8 only

Chef Antwan Dickerson, quoted in Universal's post, framed the menu around Jamaican street food. "Jamaican culture is really big on street food," he said. "I can probably say they're grilling every single day."

The first item is a skewer, offered with a choice of New York Steak, Chicken, Prawns, or a plant based "Steak" version that Universal lists as Plant Base "Steak." Dickerson says each one is built with bell peppers and pineapple arranged to represent the colors of the Jamaican flag. The sides listed are breadfruit "tostones," roasted corn, Jamaican festival (a sweet fried dough), coleslaw, and a pomegranate BBQ sauce.

The second is Ackee & Saltfish, Jamaica's national dish. Universal's version is sauteed ackee fruit and salted codfish with breadfruit "tostones," roasted peppers, tomatoes and coriander. It is a breakfast staple in Jamaica, though it is eaten at any hour there and across the diaspora, and Universal is serving it from 3 p.m. onward as part of the afternoon and evening celebration.

What is happening around the food

The celebration starts at 3 p.m. Universal lists live bands playing "all day," plus a steel drummer, stilt walkers and ground performers. The venue already programs a live reggae band and a DJ in its courtyard each evening, so the steel drummer, the stilt walkers, the ground performers and the 3 p.m. start are what is specific to August 8.

That start time is also earlier than the venue's usual opening. Universal does not publish separate hours for the restaurant on its own page, but third party trackers including Orlando Informer and TouringPlans list it opening at 4 p.m., so a 3 p.m. celebration start is at least an hour ahead of a normal day.

What Universal did not say

No prices on the specials. The venue's regular menu is priced on Universal's website, but neither the skewers nor the Ackee & Saltfish carry a published price, and Universal did not say whether the special dishes replace the regular menu that day or sit alongside it.

No end time. The only time given for 2026 is the 3 p.m. start. Universal describes the bands as playing all day but did not state a cutoff for the entertainment or for the special dishes. For reference, Inside Universal listed last year's edition as running 3 p.m. to 1 a.m.

No word on reservations or the age policy. Bob Marley - A Tribute to Freedom takes reservations through Universal's dining reservation system, but Universal did not say whether they are recommended for the celebration. The venue has also historically shifted to 21 and over later in the evening, and Universal did not say how that applies on August 8. Anyone bringing kids to a celebration that starts in the afternoon and may run late should check before booking.

Worth knowing before you go

CityWalk does not require a theme park ticket, so this is reachable on a day when you are not visiting Universal Studios Florida, Islands of Adventure or Epic Universe at all. Standard Universal parking rates apply.

The venue itself is a replica of Bob Marley's home at 56 Hope Road in Kingston, which Universal says it created working with Rita Marley and the Bob Marley Foundation. It programs live music nightly. Alcohol service is 21 and over with a valid photo ID.
